Quark Production
Quark is a fresh cheese product which is gaining popularity
in the US because of its versatility. It is found all over Germany,
Poland and Austria. You can eat it straight like cottage cheese, as a
spread on bread, for dessert and you can bake with it.
Ingredients:-
- Milk
- Cheese Culture
- A Piece of Cheese Cloth.
- Test-Cleanlyness of milk
- Pasteurization-65oc-30 min or 72o-15 second(use double walled utensil)
- Cooling-Up to 20oc.
- Inoculation- Cheese culture-3%,A drop of rennet for 5Lof milk and mix well.
- Incubate-20oc-24 hour.
- Cutting Clots-5-7cm3 cubes.
- Removing Whey-Wrap with cheese cloth and hang.
- Use-as sandwich spread,as dessert with fruits.
